Things in Bowls is back! The blog took a break over the holidays but, now that were back, I've got plenty of recipes to share. You can expect a lot of soup recipes today and in the next edition because you can't beat soup when you want a warm, delicious, one pot meal! This is one of our favorite soups for the colder months. It has smoked paprika, which we LOVE and also uses ground turkey, which I like as a cheaper way to get some protein. I made some cornbread muffins in my giant muffin tin to go with this at the last minute so we'd have carbs at the meal. However, in my rush, I forgot to add the sugar to the batter and they were a little sad. It was easily fixed with some butter and honey 🙂
I'm not usually a big meatball fan but this looked like a fun spin on butter chicken, which is one of my favorite Indian dishes. We used ground turkey instead of ground chicken because that was what Aldi had. I still like traditional butter chicken better, but this is a slightly quicken and cheaper version!
This recipe caught my eye because it was different from all the other soups we make on a regular basis. We also try to do meatless meals 4-5 nights per week to save on the grocery budget, so this was a nice way to change up our normal routine there as well. Neither of us love sweet potatoes, so we used carrots instead. I left out the spinach as well.
This may not look like much but we love it! It's another quick, cheap, delicious winter staple in our house. The recipe calls for 1/2 teaspoon of red pepper flakes and I don't do near that much (more like a couple of sprinkles), so it isn't spicy at all when I make it. I also only do one onion instead of two and double the amount of celery and carrots (because I typically don't need the celery for anything else unless I was really thinking ahead and I don't want it to go to waste!). We usually have cornbread on the side.
